It is better to get a revised passport with added surname, even if rest of the documents do not have that.
Else it would be an issue once you come to US, and have to apply for so many things.

Ranking depends on so many factors, which might/might not relate to placements.
If the college has nice building, or students fill good surveys about the university, the ranking...

I don't think OSU has bright placements because of its location.
Chicago and Florida have better job prospects than Oklahoma location.

Both the universities are cost effective as they are not in a very high cost place.
So u applied for UNH in January. When did they communicate the final decision?

Can you please confirm you profile in terms of undergrad %, GRE, TOEFL, work exp, etc?

University of New Haven is very high in terms of cost of living.
The other's are better in terms of cost factor.
When did you apply for UNH, and when did you get the result?

There is process called deferred admission, through which the university can postpone your admission by 1-2 semesters.
